Fried Chicken
INGREDIENTS
- flour
- paprika
- salt
- masala
- thyme
- ginger
- garlic
- lemon
- turmeric
- black pepper
- maziwa mala(sour milk)
- basil
- sugar
- corn flour
PROCEDURE
- 8-12 hours before the actual cooking ,Boil 2 cups of water, 1/2 cup of salt and 1/2 cup of sugar and 2
basil leaves
until fully dissolved
- Allow the mixture to come to room temperature and put the chicken in the mixture to brine for 8-12 hours
in an airtight
container in the fridge
- Grind the garlic and ginger into a paste and apply on the raw chicken
- add a tablespoon of each dry ingredients to the
chicken
- Squeeze the juice of one lemon and add it to the chicken
- leave to marinate for 2-8 hours
- In a separate container,add the flour(approx 300g) and a tablespoon of each dry ingredient and mix well
- Dip the piece of chicken in the maziwa mala and then I the flour mixture
- Fry in hot oil till golden brown /cooked through
- Garnish with coriander
- serve with fries or whatever accompaniment
