Fried Chicken

INGREDIENTS


  • flour
  • paprika
  • salt
  • masala
  • thyme
  • ginger
  • garlic
  • lemon
  • turmeric
  • black pepper
  • maziwa mala(sour milk)
  • basil
  • sugar
  • corn flour

PROCEDURE


  1. 8-12 hours before the actual cooking ,Boil 2 cups of water, 1/2 cup of salt and 1/2 cup of sugar and 2 basil leaves until fully dissolved
  2. Allow the mixture to come to room temperature and put the chicken in the mixture to brine for 8-12 hours in an airtight container in the fridge
  3. Grind the garlic and ginger into a paste and apply on the raw chicken
  4. add a tablespoon of each dry ingredients to the chicken
  5. Squeeze the juice of one lemon and add it to the chicken
  6. leave to marinate for 2-8 hours
  7. In a separate container,add the flour(approx 300g) and a tablespoon of each dry ingredient and mix well
  8. Dip the piece of chicken in the maziwa mala and then I the flour mixture
  9. Fry in hot oil till golden brown /cooked through
  10. Garnish with coriander
  11. serve with fries or whatever accompaniment
